The owner's manual on my 90 Westy mentions it... but I can't quote right now because I am 200 miles away from my Van.

  I have both original owner's manuals for my '81 Westy.  Neither says a single word about turning off the propane or the refrigerator while driving.  It does say not to run the gas stove while driving.
