Jason, If you want to put a carat table in a regular van you have to get a carat rear seat. I bought a carat table panel this summer and was very dissapointed when I found out it wouldn't fit with my standard vanagon gl rear seat. I am still looking for a rear seat that will fit at a reasonable price. Maybe you could use the westy type table that swings out of the way when you don't need it? I just wanted to save you from the headache I had.
