Every time I have had something like this happen, it was a head
gasket... even when I didn't want to admit it.

It can just be a SLOW head gasket leak. My last head gasket gave us
fits until we admitted the problem for 3 months! Replaced caps, bled,
etc... and finally faced the music when it overheated it's last time.

How did you check the head gaskets?
