As other have stated your set up is standard. That is a two stage regulator and it is now required for indoor cooking-heating appliances to ensure that liquid propane never makes it to the appliance as could happen from on overfilled tank late used at an angle where the outlet is picking up the liquid. The regulator should have a cover to protect the vent especially in winter. There is plenty of room to shorten those copper lines and re-flare them. The inlet and outlet fittings on the Extend a Stay can also be worked to shorten it. There are also different fittings available even with the male flare ends on them to help. Unless you are using a furnace the 2.5 gallon tank is plenty for two weeks or more of refrigerator and stove use. There is a larger tank now available (3.3 gallon I think). Back when our vans were built places that restricted propane travel usually allowed up to 10 pounds. It seems now most tunnels and some bridges either don't allow it are restrict its use, (valve has to be turned off and secured). Especially on ferries. Considering the small interior volume of our campers I hesitiate to increase propane capacity. There is just not much room inside to dissipate it if ever needed. For longer stays? I don't think my setup is standard so the extend-a-stay kits may not work.
