I used to work that at one time. Any restaurant in Amsterdam that is open is great, but the real jewels are out in the small towns. Zandvoort, the beach town, has lots of them. Wilma en Albert Steak House in Haarlem served some of the most memorable meals of my entire life. Both places are an easy drive out and back to town. In any good restaurant in The Netherlands, you need to get there by seven pm and wait at the bar to get a table. Dining starts at eight, and the table is yours for the night. If you are dining in Amsterdam avoid Central Station at night. I don't remember any good restaurants down there anyway. One decision is what kind of food. they have every nationality, including a few native "dutch" restaurants that serve small wild game as a traditional food. But the French and Chinese restaurants are outstanding, and in Amsterdam you will find excellent Japanese and even Mexican.
