Jed , I have a 1983 air cool but I think your problem is the same as mine. My oil pressure light is coupled with an oil pressure gauge with an alarm so I am annoyingly aware of any low oil pressure. On a hot day with high oil temp , the oil lost its viscosity which lower the oil pressure. when you stop1, the oil pressure is too low and trigger your light. When you accelerate , you build up oil pressure and that's Okay , that's when you idle or go low low speed that you have problem. You need to cool your oil by adding a secondary oil cooler , you can also use synthetic oil which may help a little Anything which will have your oil temp down should fix that problem.
