Hi Joe I had this same probelm about a year ago. It got so bad taking off at intersections became a real worry. I checked a few things but the fuel injection system got the better of me (I chickened out) and I took it to the local VW dealer. It cost me $150 and it was back as good as new. When I asked what was wrong, they just said that they checked and re-set everything!? My suspicion is that the ignition timing was out and they set that and checked everything else as there really isn't that much to set on the VW. It's cheap so I suggest the timing and then all the other standard service stuff before you spend big money.
